Gingerbread became popular in Europe during the 11th Century after ginger was first introduced from the Middle East. Reportedly Queen Elizabeth I was fond of having gingerbread men fashioned into the likeness of important guests.
According to some the Gingerbread Man represents Adam, the first man, because he is created not born and is the color of the earth.
But a more simple explanation is that gingerbread boys and girls, with their toy-like appearance, represent the toys that Santa Claus brings to all the good little boys and girls.
